What’s for dinner tonight? Stuffed Courgettes baked with cheddar cheese



I love Stuffed Courgettes .
They are  one of my favorite low calorie, and low carbohydrate meals, especially if I want  to slim down and eat more vegetables.
The best thing about this meal that it can be eaten hot as a main  meal or cold as a snack.
I usually like to prepare them at the weekends as it can  be bit time consuming.



Ingredients  for two portions:
150 g  lean  beef or turkey  mince
2 Courgettes
30g Cheddar cheese, grated
Olive oil ( or any other oil)
1small  Onion
100g  Cherry tomatoes, chopped
cloves Garlic, crushed
Dry Thyme, Basil, Oregano
1 small spoon Dry Paprika Powder
1 small spoon Cayenne pepper
Salt to taste

Tip:
If you are a vegetarian, just replace  meat with  cooked rice or couscous.

How to get started:

Preheat the oven to 180 degrees.

Cut the courgettes in even halves lengthwise a and scoop out the seeds, but  don’t discard them, you will need to add them later to the filling mixture.

Bring water to boil in a large sauce pan and blanche  the courgettes for about one minute. Take out the courgettes and place them on a baking tray.


Heat some olive oil in a pan.
Sauté the onions until soft.  Add the meat and cook until almost thoroughly cooked .
Add the cherry  tomatoes, garlic and the scooped out courgette seeds.
Season with thyme basil, paprika, cayenne pepper and salt.
Reduce the heat to medium-low and simmer until there is no  sauce visible.
Fill the mixture evenly  into the blanched courgettes , which you have already laid out on a baking tray.
Top with grated cheese.
Bake until the courgettes are just tender and the cheese has formed just a  light brown crust, for about 20 minutes.

Enjoy these Stuffed Courgettes best with a fresh side salad for extra vitamins and minerals.
